My Favorite Holiday Recipes

Good morning bloggies :) Since I have been really terrible at posting I decided to change things up a little bit. Everyday starting today and going all the way through Christmas-I will post a recipe of my favorite Holiday Recipes. These may not be my own recipes, but I will always post the source. There will be appetizers, side dishes, main dishes and desserts. I hope you will all find this as cool as I do :) I will also be posting a few of my eats along the way and sharing a few things that are going on in my life as well. So, do not worry-you will still get your daily dose of Krittie :)

The first holiday recipe is a side dish, brought to you by KRAFT. I did make some modifications, but I got this recipe from the KRAFT recipe site. It’s definitely a healthy side dish-enjoy!

Cider-Glazed Brussels Sprouts with Bacon & Almonds

4 slices Lean Turkey Bacon, chopped
1 Tbsp. Grapeseed oil
1 small red onion, thinly sliced
2 lb.  Brussels sprouts, trimmed, halved
3/4 cup apple cider
1/4 cup  sugar
1/2 tsp. salt
1/4 tsp.  ground nutmeg
1/4 tsp. freshly ground black pepper
1/4 cup  Sliced Almonds, toasted
 

COOK bacon in large skillet until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all drippings from skillet.

ADD oil, onions and Brussels sprouts to skillet; cook and stir on medium-high heat 1 to 2 min. or until Brussels sprouts are lightly browned. Mix next 5 ingredients; pour over sprouts. Cook 5 min. or until liquid is evaporated and sprouts are evenly glazed, stirring occasionally. Stir in bacon.

SPOON sprouts into bowl. Top with nuts.

Not So Healthy Living

Good Afternoon Everyone. After recovery from New Years, I am back! But, in order to fill you in on what I have eaten today, I have to back it up a few days, so here we go!

On Wednesday, I got off of work early and went right to the mall to get a new shirt for my NYE activities. Surprisingly I found a really cute shirt for only $14, this was probably the shortest trip to the mall ever! Once I got home, I jumped right into bed and took an hour nap with Gregg so we could both be ready to go later on that night. I woke up around 4:30 and jumped in the shower and got ready to go to Mitchell’s Fish Market for dinner. Gregg and I both had the NYE special which consisted of a salad, a 3 oz lobster tail, a lobster and shrimp cake and some creme brule to finish off the meal. It was out of this world! The lobster was done perfectly and the cake was so moist and delicate. I was so glad we went there for dinner. I also had a glass of red sangria with my dinner. This meal left us feeling satisfied and not too full, which was good because I knew drinks were to come!

After dinner, we went to a friends house for some drinks and a little bit of Wii Playing. It was a blast, turns out I can bowl on the Wii! Here are a few pics from the night:

I do have more pictures, but I will post them later because my camera would not upload them onto my computer, sorry! We stayed at the party until about 4:15 am and when we got home, I crashed. I had a lot to drink that night and was just in that very tired mode. I think I had about 4 glasses of wine, a few beers and a few glasses of champagne. I was pretty much drinking from 8-4 which always makes for a not so healthy meals the day after. I woke up around 11:15a on Thursday and the first thing I went for was water and aspirin. I had a pounding headache and just wanted to drink like a gallon of water.

For breakfast, I attempted to make whole wheat pancakes:

Unfortunately, they did not turn out that great, so I only ate one and made myself a bowl of cranberry-pumpkin oatmeal. Gregg ended up eating the pancakes because he didn’t think they were that bad, I think he was just trying to be nice! Because we ate such a late breakfast, we didn’t even eat lunch! We jumped right to dinner around 6 or so. For dinner, we ordered pizza. This pizza was from Toppers Pizza and had cheese, sausage, black olives, green peppers, onions and bacon on it. So bad for me, but so good! We also ordered some cheese bread where I had a few pieces of that too! I know this food isn’t good for me, but I needed some grease in my stomach after the night I had!

And of course, I had to have something for dessert, and it clearly couldn’t be anything healthy! So, I had a mini caramel sundae. Mine was caramel flavored ice cream, with caramel syrup and little mini caramel filled chocolate cows. Gregg had the mint one which had chocolate syrup, mint ice cream and chocolate cows in it. Again, so bad but so good!

After my day of unhealthy eating, I was back on track today. I started off with a bowl of Trader Joe’s High Fiber fruit and nut cereal with a cup of coffee.

I was up pretty early today to do a few things around the apartment and since I have the day off, Gregg and I decided to meet up for lunch near his work. Of course his friends wanted to go to a VERY unhealthy place for lunch: Qdoba. If you don’t have Qdoba’s by you, it is basically a Mexican restaurant where you can build you own burrito. However, I opted to get the healthy version of the burrito. I got mine naked! Which is everything in the burrito except the shell. Their shells are huge and pack on about 600 calories to your meal, INSANE!!!! So, I had a little bit of rice with black beans, grilled squash, green peppers, onions, and mild salsa. See, you can eat healthy at a semi fast food restaurant! After we ate lunch, I said my goodbye to Gregg and I was off to Whole foods. I needed to pick up a few things that I cannot find at our regular grocery store. I bought truvia, some tofu, dates, hummus, clif bars, some gelato (not pictured, in the freezer) and some salads for dinner.

It feels good to be back to normal and eating like I used to! But, that’s all for now, time to do laundry! Have a good day. :)

Back to Normal

Good Morning Everyone! I hope you all had a wonderful holiday and are ready to have a somewhat normal work week. If you don’t have to work, you are lucky and I am extremely jealous! However, I only have a 3-day work week so it won’t be too bad. But, I should really get started because I have a lot to wrap up from the last few days. So, get ready this is one really long post!

On Christmas Eve, we went to my Uncle Mikes house where we had prime rib, potatoes, rolls, jello, corn, ham, cookies, pie and WINE!! I only had about 3 glasses of wine and was defiantlyfeeling it. So, after the 3rd glass, I stopped drinking because my mom and I had planned to go to midnight mass. By the time church rolled around, I was perfectly fine so don’t get all judgemental on me about drinking and then going to church. After midnight mass, I slept over at my moms house. On Christmas morning, I wrapped a few presents, ate a few cookies and made a trip to Starbucks for everyone and ended up with 9 different cups of coffee! My total spent at Starbucks (including a $15 gift card) $45.60. I probably should have just put a pot of coffee on, but this seemed a little more festive!

Christmas Lunch/Dinner consisted of turkey, ham, corn, potatoes, jello, pretzel salad, stuffing, gravy, rolls, cookies, candy and cranberry sauce. Here’s what the spread looked like:

And last but not least, me and Gregg at his parent’s house. The little cow is Tipsy, there is a story behind him, but I don’t have all day to tell it!

Christmas was wonderful but I am kind of sad it is over. We spent Thursday, Friday and Saturday morning at Gregg’s parents house. When we got back on Saturday, we went to Champs to watch the Badger game and shared some chicken nacho’sfor lunch while having a few drinks. Later on that night, we went out for Sushi with my brother Jeremy. I couldn’t decide what to have so I opted for the bento box. However, I only had 3 California rolls, 1 bite of the Shrimp Tempura(my stomach cannot handle fried foods too much!), some of the stir fry and 2 dumplings. I took most of it home with me.

After dinner, we went to BBC’s for a birthday party, where I only had a diet soda. We made it an early night because I was really tired.

Sunday Morning, I had a bowl of cranberry-pumpkin oats with some high fiber cereal.

After breakfast, we had our final Christmas to go to. We went to my brother Jim’s house and had a TON of  food once again! I had some turkey sausage, a whole wheat roll, some veggie pizza, a few pieces of fudge, and a sugar cookie or two. I honestly don’t even know how much I ate. This is the only time of year where I try not to worry about what I am eating because I know I will get back on track.

Sunday night, after Christmas I started to unpack all of my presents. The first items to unpack were my new muffin and bread tins!

A new toaster that has a bunch of different settings. There is even a reheat button to reheat your toast without browning it, how cool is that?

The final present that I set up and tried right of way was my new Coffee Maker from Gregg. Have you seen these before? They are the new single cup coffee makers that come with tons of different coffee. There was an 18 pack that came with the maker and Gregg also purchased a 60 cup variety pack and an 18 pack of Caribou Coffee. This is a really cool gift considering I usually go to Starbucks or Caribou at least 5 times a week! Just think of all the money this will save me now!

My mom also bought me this awesome new traveling coffee mug. Do you see that red button on it, you push that and a green light on the top comes on saying that you can drink and coffee will come out. If a red light is on, it means that it is closed and no coffee will come out! It’s pretty high tech if you ask me.

So, obviously we had to try our new coffee maker last night. We tried the hot cocoa that came with it and it was mighty tasty! This morning I had a bowl of oatmeal and I tried this coffee: Newman’s Own Extra Bold Special Blend. I added about 1/3 cup of Silk Nog to my cup of coffee and it was perfect! I love you new coffee maker!

Betty Crocker Kind of Weekend

Good Afternoon everyone!! I hope your weekend was wonderful. Mine was filled with baking and prepping for the upcoming week. I didn’t really take pictures of everything I ate because I didn’t really cook a meal this week. The only meal that I prepared myself was breakfast. I know, not good! But, on Friday for breakfast, I had some oatmeal.

After my breakfast, I started making a double batch of sugar cookies. I don’t know if you remember, but a single batch makes 60-64 cookies, it’s going to be a long weekend of baking (you will see that soon!). After I made the dough for my cookies, I was off to pick my mom up from the hospital, don’t worry nothing is wrong, just an annual checkup! After her appointment, her and I went out to lunch at the Olive Garden where I had Minestrone soup and salad with one bread stick. I love the soup, salad and bread sticks combo!

After I dropped my mom off at her house, I headed back to my apartment to make chocolate covered pretzels. This was my first time making them, so it took me a little longer to make a batch. But, after it was all said and done, they turned out pretty good. I might be making some more tonight or tomorrow if I am feeling ambitious.

Friday night, Michelle and I headed off to Illinois to see our friend Hans. He just graduated from college with 3 Majors! One in Music, one in Business Management and the last one in International Business! To top it all off, he can sign Opera! How crazy is that?!? Oh yeah and he speaks 5 different languages. I am so proud of him, way to go Hans!!!! We got home around midnight or so and when I got home I took a shower and went to bed!

Saturday morning I actually slept until 10am! I must have been really tired to sleep that long. But, when I woke up, I had some chobani yogurt with high fiber cereal and an orange.

After breakfast, I hit up the mall to finish some things for Christmas. I am finally done shopping! But, after the mall, I met up with Amy for lunch where I had a beach wrap (a whole wheat tortilla with turkey, avocado, lettuce, cucumber, tomato and ranch) with some cottage cheese. It was pretty good if I do say so myself. After lunch I was off to start some more baking.

The first thing on my list was pepermint bark. This was it before I put it in the frezzer.

After I made the bark, I was off to roll out all of my sugar cookie dough, cut them out and bake them. It took FOREVER! I started around 5 and they were done baking by about 6:30p. After they were done baking, I had to frost them. I was up until 1:00a this morning frosting all of them! I gave some to my mom because she came over to help me and I kept the rest. I have about 100 sugar cookies at home right now! Here is a sample:

In between baking the cookies and frosting them, my mom and I made angel food candy aka fairy food!

Okay, maybe it’s not that pretty, but we have 2 containers full of this because after we made the first batch we decided to make another one because it turned out so good! See the thing with the fairy food is that my dad was the one to make it, but then he passed away. My mom attempted it many times last year and it never turned out right. But, this year, dad must have been helping us because it turned out perfect!

After I was done baking and eating around 3 sugar cookies and 2 pieces of fairy food I decided to hit the hay around 2:00 am today! When I woke up this morning I decided to make egg nog oats and coffee.

This was soo good! But, after I ate a little bit of the oatmeal, I decided to add some high fiber cereal. But, now I am off to work to get a few things done. Have a great day everyone!

Snow Day!

Good Morning Everyone! Today is officially a snow day for me. When I looked outside and saw that you couldn’t see the tires on anyones cars, that’s when I decided to make the call to work and said, “I am taking a sick day today, see you Monday!” But, my whole thought on actually going to work today was this: Today is Friday, which means a 4 hour work day. It will take me at least 2 hours to make it to work so by the time I get there, I will only be able to work for about an hour and then I will have to drive the 2 hours back home….not worth it! So, I sit here at 6:30a blogging andthinking about how this gives me time to do everything I planned to do this weekend! And for some reason I keep looking outside and I have no idea why, because this is all I can see:

I don’t know if you can even see it, but there is a car in there somewhere. It is snowing A LOT here, like we are having Thunder Snow! If you don’t know what that is it is basically a thunderstorm with thunder and lightning but instead of rain, it is snow! Crazy morning! But, now onto food.

For lunch, we went to maggiano’s and I had a piece of bread, a side salad and a little bit of whole wheat penne noodles with marinara sauce. My boss took some dessert with her to go and actually came over and brought me a little piece and REALLY wanted me to eat it. I have been working there for about a year and a half now and she has NEVER seen me eat any dessert, ever! So, I ate it and then shocked the hell out of her later when I had a cupcake that someone brought in. I couldn’t resist, it had green whipped topping frosting and it was SOOOO moist on the inside. Not at all heavy or greasy, so I am wondering what they used to make it so moist. I don’t know, but it was damn good!

Last night I got home kind of late from work and decided on french toast and an apple for dinner.

Then, after dinner Gregg and I went shopping for a few things I needed to make the following:

  • More sugar cookies
  • Angel food Candy aka Fairy Food
  • Peppermint Bark
  • Chocolate Covered Pretzels
  • Lemon Cookies
  • Gingerbread cookies
  • Cranberry Sauce
  • Triple Layer pumpkin pie

So, in order to make all of this, I had to buy margarine, powdered sugar, cream cheese, dark corn syrup, candy canes, white chocolate, dark chocolate, milk chocolate, graham cracker crust and cake mix. I am going to be a baking fool!!!! For dessert, I don’t know why, but I had a major sweet tooth that WOULD NOT go away, so I may have over done it on the dessert, but I counted for it and moved on.

I had half of a Zero bar, 2 chocolate chip cookies and a few vanilla meringues. And, f that wasn’t enough, I had a few bites of Egg Nog Ice cream! Unfortunately, in my mad rage to have something sweet, I only got the picture of my candy bar.

This part of my candy bar was 3 points! So tiny, but so good and worth the points! But, that’s all I have for now, I am off to have an apple and some coffee while watching Saved by the Bell. Have a good day!

Oh wait!!!! I forgot to tell you who the winner is for the 2nd chocolate giveaway!!!! Melissa from Trying to heal won with a guess of 70!!!! Melissa actually guessed the exact amount that my mom packed in there!!! Congrats Melissa! I will send you an email to get the shipping info from you sometime today! Thank god his week is almost over! I cannot wait! But, enough about that onto food! Last night for dinner Gregg and I decided to have some minestrone soup with a salad.

After dinner, I watched some of the Victoria’s Secret Fashion Show as is replayed on the CW last night. I will admit, some of the things they wore were cute. But some of the items were hideous! Who wear stuff like that? Oh yeah that’s right, no one! Also, could they please stop blowing kisses at everyone, it was cute the first 2 minutes, but then it was overkill. After 5 minutes, I switched the channel and watched Man V Food. I think I am addicted to this show because I get so amazed by how much this guy can eat! I mean did you see the sandwich that was as big as his head??? How does one even bite into something like that? After Man V Food, I watched my boyfriend on the food network….er I mean Bobby Flay. I love him, he can come cook for me anytime.

But, anyways during my oogleing of Bobby Flay, I had a chocolate chip cookie with some mini merignues.

After I watched a few episodes of throw-down and another Man V Food, I went right to bed. I think I was sleeping by 9:30 last night! Oh well, I guess I was tired.

For breakfast this morning, I had a bowl of cranberry pumpkin oats with some high fiber cereal on top.

Let’s hope this bowl can hold me over until lunch. I am going out for lunch today with a few people from work as a holiday lunch. We are going to Maggiano’s and I have no idea what I will have. I guess we will see later!

Happy Hump Day!

Good Morning Everyone! I cannot believe how busy I have been lately! Work, Seminars, Christmas Shopping, Baking.. the list goes on! But, lets do a little recap from Monday and Tuesday! After I posted yesterday about my chicken, cookies and egg nog I realized I didn’t  post anything about egg nog!! How crazy is that? I meant to post this:

Two pieces of Egg nog taffy that I had with my cookies for dessert! See what I mean about not having enough time for everything, you forget your head! So, now that I have that off me chest, let’s move onto yesterday!

For breakfast, I had some Cranberry Oats (1/2 c of oats, 1/2 c of cranberries, 1 c of water, 1 tsp of cinnamon and a pinch of sugar)

I don’t think that I can get enough of these oats! It’s a good thing that I bought a ton of cranberries and froze them! After my breakfast, I got ready to attend an Employment Law Seminar. The seminar was actually really good! I will be taking a lot of the information back to the office with me! The best part of the seminar was lunch!

They made a wonderful Salad for everyone! The salad had chicken, grapes, strawberries and much more! It was really an awesome salad.

They also offered us some cookies, but I had the will power to say NO! But, when I got home from the seminar, I had some pumpkin fluff and a few potato chips to hold me over until dinner.

For dinner, we had pizza and salad. I had mine with the best soda ever: Diet A&W!

This pizza was actually really flavorful! We got it from Sendik’s and it had spinach, sundried tomatoes and mozz cheese! So savory and garlicy too! I also had about a cup or so of Gregg’s popcorn! For dessert, I had some egg nog ice cream and a few cinnamon puffins. Sorry, no pic!

This morning, I decided to have a Strawberry Chobani and some Trader Joe’s High Fiber cereal with an apple!

Sorry the pic is kind of dark, I took it without the flash. But, for lunch, I packed up a peanut butter and pumpkin sandwich, an orange, some vanilla meringues and a broccoli and broccoli slaw salad with salt and pepper ontop.

But, that is all I have for food right not!

BUT WAIT!!! I NEED TO SAY WHO THE WINNER IS FOR THE CHOCOLATE GIVEAWAY!!!!

MARISA from Trim the Fat!!!!!! She guessed 65 pieces and was the closest.

The actual amount of chocolate I fit into that bag was 63 pieces!!! There were 2 other people who were very close as well, and because of this I am going to give everyone another chance to win FREE CHOCOLATE!!!!

IF you can guess how many pieces of Chocolate my MOM fit into her bag, I will also send that person some free chocolate to try!

Where did the Weekend Go???

WOW, I am sorry, I didn’t post ALL weekend! But, with good reason. My reason: I WAS NEVER HOME! On Friday, I went to the dentist to get my temporary crown put on. That last about an hour or so. After the dentist I hada hair appointment. After my  hair appointment, Gregg and I stopped at Panera and had some soup and headed home to get ready for my works Christmas Party. The party started at 6 and we stayed until about 10. When we got home, I went straight to bed because I was exhausted!!!

Saturday was again, another busy day! I got up around 8 or so and made myself some oatmeal.

After I was done with my oatmeal, I started making some more sugar cookies. So I started with the dough and put that in the fridge to chill and then started on another type of dough: White Chocolate Chip cookies! And, just as I was finishing the dough, my mom called to see if I would go Christmas Shopping with her. I of course said yes, so she picked me up around 11 and we were on our way! We stopped for lunch at Panera and also got some coffee at Alterra while shopping. When I got home from shopping, I cut out the cookies and baked and frosted them and also made some of the other cookies. (Sorry, I was in such a hurry that I didn’t take any pics! I do however have to make more, so you will get pics later!) After the cookies were done at 7:15, I had to jump in the shower and be ready by 7:45 to go bowling with Gregg and his coworkers. Bowling was a blast! But, by the time bowling was done, I was really hungry. So, needless to say, Gregg and I stopped for breakfast at 1:30 am! I hate late night eats like this, but I needed something!

On Sunday morning, Gregg and I went to Caribou coffee where I had my usual coffee w/ steamed milk. After our Coffee run, I got home, took a shower and was headed back to the malls with my mom to finish up some shopping. I may have bought myself a present while out and about yesterday too! I bought this guy yesterday:

I actually feel really bad about spending the money on it, so please tell me it’s okay so I don’t take this beautiful purse back! Also while shopping, mom and I had some lunch at a local Chinese place. I had some rice and veggies in a white sauce while mom had some rice with mixed veggies and chicken with soy sauce. We then continued to shop. I will post some pics of the other things I bought yesterday later on, because there are some things that you HAVE to see!!!!

Dinner last night, wasn’t anything fancy! I had a veggie burger with cottage cheese and an apple on the side.

Then, for dessert I had the Best Bar by Youbars!

This was BY FAR the best one, so the name doesn’t lie! It had a wonderful cashew flavor with cranberries, cherries and almonds in it! SO GOOD!!!! Thanks Youbars!!!!

Then, for breakfast this morning, it was the same oats as on Friday(Cranberry/Pumpkin) so I didn’t snap a pic. But, I did snap a pic of my lunch that I packed today: A pumpkin and peanut butter sandwich, pretzels, peaches, puffins and meringue mix. I am really looking forward to this lunch because I am already hungry!

Christmas is in the Air!

Happy Thursday Everyone! I am in such a good mood this morning, and I don’t even know why, oh well, I’ll take it! Do you like the new layout? I think I am going to change it to be a little more Christmas like, but for now it will do. But, since I missed a regular post yesterday, I am going to get right into it. For Tuesdays eats, I am just going to post the pics since I told you all what I had yesterday! Here we go:

Now onto the good stuff! Dinner last night was an oldie but a goodie! Tomato Soup and Grilled Cheese! But, I added some noodles to my tomato soup and a piece of turkey bacon to my grilled cheese! This totally hit the spot last night!

Then, for dessert last night, I had a cup of Diet Hot Chocolate and a Sugar cookie with frosting and sprinkles on it!

I will end up eating my yogurt at work and I plan to stop and grab a nonfat sugar free vanilla misto from Starbucks on the way to work as well! For lunch this afternoon, I packed up some soup, leftover broccoli, another you bar and some grapes.

I hope you all enjoyed my eats for the last few days! Now, onto the most exciting part ever! MY CHRISTMAS TREE!!!! Here it is, all decorated!!!

We bought these last year, and we also have a green one, a pink one and a purple one that all have glittery polka dots on them just like this one!

And look who made an appearance on our tree:

That’s right, Rudolf!!!! Him and his friends are on our tree, it’s Gregg’s touch! We have all of these nice pretty snowflakes, stars and colorful sparkly ornaments and the whole Rudolf Gang!!!! And somewhere on the tree is our Pickle!!!!! Can you find it?

Sugar Cookie Recipe!

Because of the many responses I got in regards to the sugar cookies I decided to post it for everyone.  Just a note, I got this recipe from Gregg’s Mom. I cannot take the credit for these, but they are wonderful! Don’t try to make them healthy cookies, they are perfect the way they are!

Sugar Cookie Recipe

  • 1 1/2 cups of sugar
  • 3 sticks of margarine or butter
  • 2 eggs or 1/2 cup of egg beaters
  • 2 teaspoons of vanilla
  • 1 teaspoon  salt
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 3 1/4 cup of flour
 
Mix sugar & margarine or butter, beat until creamy. Add eggs & vanilla and beat. Mix in dry ingredients. After it is all mixed put in the refrigerator till chilled. Chill at least 1 hour or overnight. Roll out small amounts. Put cookies on ungreased cookie sheet. These cookies spread a little so allow for that. Bake at 350 degrees for 10 to 12 minutes.
This recipe makes at least 60 cookies (5 dozen), so if you only want to make half, just cut the recipe in half.

Frosting for Sugar Cookies
  • 8 ounces of Cream Cheese, softened note: I used reduced fat, do not use fat free!!!)
  • 1 pound of Powdered Sugar
  • 1/2 cup of melted butter or margarine
  • 1 1/2 tsp of vanilla

Mix all ingredients together and enjoy! Wait until the cookies are cooled before decorating them, I would say about a half hour or so.

You can add food coloring to the frosting like I did to give your cookies a festive feel! The final Product:

*For those who are counting WW points, each cookie with frosting is 3 points, if you opt not to frost them and just add sprinkles, it is 2 pts.
