Busy day!

Good morning everyone, I have to make this quick because I have to get going to work asap! Last night, I brought home Pizza and Beer for Gregg! Like I said, the way to a mans heart! I actually built a 6-pack of different kinds of beer. Gregg ended up having a white beer from Cali and a few pieces of pizza with popcorn. I had the same:

However, I ended up getting really full so I only had 1 1/2 pieces of pizza. And, I wasn’t a fan of this beer so I only had maybe half of it. I also had a cookie after my pizza and beer for a total pts of 10.5.

After dinner we went to the grocery store to pick up a few thigns for the poker party we are having on Friday. Once we got home, I had a bowl of cereal and another cookie for dessert for a total of 4.5 pts.

Then this morning I made my first bowl of oats on the stove! How crazy is that, I usually make them in the microwave, but I wanted to try something new: Apricot Oats. I used 1 cup of oats, 2 1/2 cups of water, 1/4 cup chopped dried apricots, 1 tbs of honey and a dash of cinnamon. This made 2 bowls of oatmeal, one for me and one for Gregg. Total pts: 4. I will have to admit, I think I like the microwave better. I am not sure if these oats got done all of the way because they were still a little chewy, but the flavor was awesome! The apricots added a great flavor!

And for my lunch today, I packed up carrots, string cheese, 2 tangerines and about a half cup of mized blueberries/blackberries/strawberries. I also made a pb and j with an arnold thin (not pictured), total pts: 4.

Fat Tuesday!

Good Morning Bloggies! I hope your morning is going as great as mine is! Today is Gregg’s birthday so I am doing something a little special for him when I get off work today. As my boss says, It’s the way to a mans heart! You can think what you want, but I can’t tell you all what it is until tomorrow because he may read this today. So with that in mind, I will jump into the food! Yesterday, I was an eating machine, no matter what I couldn’t stop eating. I hate days like that! I ended up eating a bag of pretzels from the vending machine. And let me tell you, they were not worth the 5 points either! Oh well, I guess everyone has days like that! Last night when I got home, I snacked on some peeps (1pt) and made Turkey Chili for dinner. I had 1 bowl of turkey Chili, a salad and an arnold thin (4pts)

After dinner I snacked on 2/3 cup of puffins (1pt) and had 3/4 cup of frozen yogurt for 1 pt.  This brought my total pts for the day to 22.5, only 2.5 over my regular, so not too bad!

This morning I woke up craving pumpkin oats, so that is exactly what I had 1/2 cup of oats and 1/4 cup of pumpkin, total pts: 2.

And for my lunch I packed up a salad, 2 tangerines a few strawberries, and soup. Total pts: 1.5.

I have to keep my points down for today so I can have a yummy dinner with Gregg tonight. That is all I have for now, have a great day!

TIP OF THE DAY:

Make sure to get in at least 5 servings of fruits and veggies everyday. I always feel better when I add fruit and veggies to my meals. And, when you are craving something sweet, try to pick an apple or another piece of fruit, it will keep you more full than that piece of chocolate!

Thirsty Thursday

But, probably not the same kind of thirsty Thursday it was about 4 years ago when I was a freshman in college! Today is a coffee-thirsty Thursday. Gregg and I are hitting up the coffee house on the lake tonight after work and I couldn’t be more excited…. I already know what I am having and it is so delicious! So, when I am done with work, I will stop by the grocery store to pick up some mushrooms, make dinner and head to the coffee house. I know it seems boring to some people, but for me and Gregg it is pretty relaxing to sip our coffee and be old.

But, anyways onto food! Last night we tried something new for dinner:

I have been hearing about this pizza on the WW boards and everyone is raving about them being so good and point friendly, I just HAD to try them. Along with our pizza, I cut up some veggies to share with Gregg.

I also had some Kettle Baked Chips and 4 slices of pizza (I ate one before I snapped the picture) Total pts: 5

Don’t let those pieces of pizza fool you! They are TINY! Honestly, I had 1/2 of the pizza and it was equivalent to one normal sized piece. For 3 pts, not bad but not something I will spend $7 on again. The chips however were tasty! They were the aged cheddar kind and they were perfectly salted, just the way I like them. After dinner, I had 3 sugar free peeps (1pt).

Then, for dessert I had a Brownie Clif ZBar, total pts: 2.

After dessert, Gregg and I watched Man V Food and holy cow that guy is nuts! He ate some of the hottest peppers ever last night and was crying like nobodys business. Defiantly something I would NEVER do. After the show, I made my lunch for today, and forgot to snap a pic but heres the rundown:

  • Light White Bun
  • Boca Brushetta Burger
  • Lettuce
  • 1/2 c of cheddar chex
  • 1 promax protein bar
  • 1 orange
  • 1 c of pineapple

Total pts: 7.

I am really looking forward to my lunch today because I haven’t had this Boca Burger in a long time. And, I am really excited to have some more pineapple because it was crazy good yesterday. Speaking of pineapple, take a look at my oats for this morning:

This is what I like to call my Pina Colada Oats, in the mix: 1/2 cup old fashioned oats, 1/2 cup of pineapple, 1 tsp of coconut extract, 1 truvia packet, dash of cinnamon, 1/2 cup of almond milk and 3/4 cup of water. I also added a tbs of whipped cream and fiber cereal to the mix  . But, OH MY GOSH!!!!! These were so good! I am eating it right now and all I can say is wow there is a party going in the oats this morning! The extract really brought this all together, seriously you need to try this! And now for the tip you’ve been waiting for:

Tip of the Day:

Eat plenty of fruits, vegetables, grains, and legumes-foods high in complex carbohydrates, fiber, vitamins, and minerals, low in fat, and free of cholesterol. Try to get fresh, local produce

No Car Monday

Thats right, I do not have a car right now…sigh… Gregg is currently using mine because something went wrong with his and it needs to be fixed. So, I got a ride to work and he will pick me up later. The good part: A little extra time with my huney in the morning and an earlier day at work because he is picking me up at 3:30 instead of my normal 4:30. The bad part: not being able to get my morning coffee from Starbucks because we were on a time constant and having to be at work by 6am which meant getting up at 4:30! EEKK!! Oh well, we gotta make due the best we can right? But, I think I have some catching up to do with the food entries, so here we go!

Saturday morning after my cup of coffee I had a bowl of Pumpkin oats. I think later on I also had an apple to hold me over until after lunch. But, for some reason I wasn’t really feeling this bowl of oats, it was missing something but I am not sure what…. I don’t think I added enough sweetener to it because it was kind of bland. Oh well, I’ll try again next time!

For lunch, I sliced up 2 tomato’s and sprinkled some salt and pepper on top. I remember when I was a kid, I used to load the sugar on top instead, but as I have gotten older I like the flavor that salt and pepper brings better.

I also had a turkey sandwich with some lettuce, mayo and mustard. Just as an FYI, I used low fat mayo on my sandwich’s, I think the stats are 15 calories and 1 gram of fat, so not to shabby!

Saturday night, Emily came over and we did some wedding planning. We went to Michael’s to get the paper for the invites and some other things for the centerpieces. After we did all of our shopping, Emily and I headed to the Sushi bar! We split this sushi sampler and also got a California Roll on the side. After Sushi, we stopped at Starbucks and got some coffee.

Later on that night, I went to this place called Club Anything with one of Gregg’s friends and we had a few drinks with my brother Jeremy and his wife Amy. It was actually a pretty cool place. GET THIS: At bar time, the bartenders pour everyone that is still in the bar a shot for FREE! How cool is that? I am not one to turn down a shot, so I gladly took it and ended up getting home right around 2:30a. Right when I got home, I was kind of hungry, but instead of indulging on the greasiest thing I could find, I snacked on 4 cups of Smart Pop popcorn. See, even after a few drinks, I can remember that I need to fit into a dress in a few months!

Sunday morning, Gregg, his friend Jeremy and I went to Perkin’s where I had Oatmeal and a side of fresh fruit.

After getting home from breakfast, I did a few things around the apartment and took about a 2 hour nap. I was so tired! But, when I got up, I decided to make dinner. We had Sun Dried Tomato Chicken Brats, chips and grapes. I also had a very very small salad on the side.

For my dessert, I decided to have some frozen yogurt and a sugar cookie that I had in the freezer. I only have a few of these guys left…. is Christmas really gone???

Then, this morning I had a bowl of Cranberry Oats. This one was made perfectly. I used 1/2 cup of oats, 1/2 cup of fresh cranberries, 1 packet of truvia, 1 tsp of cinnamon and 2 tsp of vanilla. I think the extra vanilla gave this a home-cooked feeling.

Back to Normal

Good Morning Everyone! I hope you all had a wonderful holiday and are ready to have a somewhat normal work week. If you don’t have to work, you are lucky and I am extremely jealous! However, I only have a 3-day work week so it won’t be too bad. But, I should really get started because I have a lot to wrap up from the last few days. So, get ready this is one really long post!

On Christmas Eve, we went to my Uncle Mikes house where we had prime rib, potatoes, rolls, jello, corn, ham, cookies, pie and WINE!! I only had about 3 glasses of wine and was defiantlyfeeling it. So, after the 3rd glass, I stopped drinking because my mom and I had planned to go to midnight mass. By the time church rolled around, I was perfectly fine so don’t get all judgemental on me about drinking and then going to church. After midnight mass, I slept over at my moms house. On Christmas morning, I wrapped a few presents, ate a few cookies and made a trip to Starbucks for everyone and ended up with 9 different cups of coffee! My total spent at Starbucks (including a $15 gift card) $45.60. I probably should have just put a pot of coffee on, but this seemed a little more festive!

Christmas Lunch/Dinner consisted of turkey, ham, corn, potatoes, jello, pretzel salad, stuffing, gravy, rolls, cookies, candy and cranberry sauce. Here’s what the spread looked like:

Christmas was wonderful but I am kind of sad it is over. We spent Thursday, Friday and Saturday morning at Gregg’s parents house. When we got back on Saturday, we went to Champs to watch the Badger game and shared some chicken nacho’sfor lunch while having a few drinks. Later on that night, we went out for Sushi with my brother Jeremy. I couldn’t decide what to have so I opted for the bento box. However, I only had 3 California rolls, 1 bite of the Shrimp Tempura(my stomach cannot handle fried foods too much!), some of the stir fry and 2 dumplings. I took most of it home with me.

After dinner, we went to BBC’s for a birthday party, where I only had a diet soda. We made it an early night because I was really tired.

Sunday Morning, I had a bowl of cranberry-pumpkin oats with some high fiber cereal.

After breakfast, we had our final Christmas to go to. We went to my brother Jim’s house and had a TON of  food once again! I had some turkey sausage, a whole wheat roll, some veggie pizza, a few pieces of fudge, and a sugar cookie or two. I honestly don’t even know how much I ate. This is the only time of year where I try not to worry about what I am eating because I know I will get back on track.

Sunday night, after Christmas I started to unpack all of my presents. The first items to unpack were my new muffin and bread tins!

A new toaster that has a bunch of different settings. There is even a reheat button to reheat your toast without browning it, how cool is that?

The final present that I set up and tried right of way was my new Coffee Maker from Gregg. Have you seen these before? They are the new single cup coffee makers that come with tons of different coffee. There was an 18 pack that came with the maker and Gregg also purchased a 60 cup variety pack and an 18 pack of Caribou Coffee. This is a really cool gift considering I usually go to Starbucks or Caribou at least 5 times a week! Just think of all the money this will save me now!

My mom also bought me this awesome new traveling coffee mug. Do you see that red button on it, you push that and a green light on the top comes on saying that you can drink and coffee will come out. If a red light is on, it means that it is closed and no coffee will come out! It’s pretty high tech if you ask me.

So, obviously we had to try our new coffee maker last night. We tried the hot cocoa that came with it and it was mighty tasty! This morning I had a bowl of oatmeal and I tried this coffee: Newman’s Own Extra Bold Special Blend. I added about 1/3 cup of Silk Nog to my cup of coffee and it was perfect! I love you new coffee maker!

Betty Crocker Kind of Weekend

Good Afternoon everyone!! I hope your weekend was wonderful. Mine was filled with baking and prepping for the upcoming week. I didn’t really take pictures of everything I ate because I didn’t really cook a meal this week. The only meal that I prepared myself was breakfast. I know, not good! But, on Friday for breakfast, I had some oatmeal.

After my breakfast, I started making a double batch of sugar cookies. I don’t know if you remember, but a single batch makes 60-64 cookies, it’s going to be a long weekend of baking (you will see that soon!). After I made the dough for my cookies, I was off to pick my mom up from the hospital, don’t worry nothing is wrong, just an annual checkup! After her appointment, her and I went out to lunch at the Olive Garden where I had Minestrone soup and salad with one bread stick. I love the soup, salad and bread sticks combo!

After I dropped my mom off at her house, I headed back to my apartment to make chocolate covered pretzels. This was my first time making them, so it took me a little longer to make a batch. But, after it was all said and done, they turned out pretty good. I might be making some more tonight or tomorrow if I am feeling ambitious.

Friday night, Michelle and I headed off to Illinois to see our friend Hans. He just graduated from college with 3 Majors! One in Music, one in Business Management and the last one in International Business! To top it all off, he can sign Opera! How crazy is that?!? Oh yeah and he speaks 5 different languages. I am so proud of him, way to go Hans!!!! We got home around midnight or so and when I got home I took a shower and went to bed!

Saturday morning I actually slept until 10am! I must have been really tired to sleep that long. But, when I woke up, I had some chobani yogurt with high fiber cereal and an orange.

After breakfast, I hit up the mall to finish some things for Christmas. I am finally done shopping! But, after the mall, I met up with Amy for lunch where I had a beach wrap (a whole wheat tortilla with turkey, avocado, lettuce, cucumber, tomato and ranch) with some cottage cheese. It was pretty good if I do say so myself. After lunch I was off to start some more baking.

The first thing on my list was pepermint bark. This was it before I put it in the frezzer.

After I made the bark, I was off to roll out all of my sugar cookie dough, cut them out and bake them. It took FOREVER! I started around 5 and they were done baking by about 6:30p. After they were done baking, I had to frost them. I was up until 1:00a this morning frosting all of them! I gave some to my mom because she came over to help me and I kept the rest. I have about 100 sugar cookies at home right now! Here is a sample:

In between baking the cookies and frosting them, my mom and I made angel food candy aka fairy food!

Okay, maybe it’s not that pretty, but we have 2 containers full of this because after we made the first batch we decided to make another one because it turned out so good! See the thing with the fairy food is that my dad was the one to make it, but then he passed away. My mom attempted it many times last year and it never turned out right. But, this year, dad must have been helping us because it turned out perfect!

After I was done baking and eating around 3 sugar cookies and 2 pieces of fairy food I decided to hit the hay around 2:00 am today! When I woke up this morning I decided to make egg nog oats and coffee.

This was soo good! But, after I ate a little bit of the oatmeal, I decided to add some high fiber cereal. But, now I am off to work to get a few things done. Have a great day everyone!

Thank god his week is almost over! I cannot wait! But, enough about that onto food! Last night for dinner Gregg and I decided to have some minestrone soup with a salad.

After dinner, I watched some of the Victoria’s Secret Fashion Show as is replayed on the CW last night. I will admit, some of the things they wore were cute. But some of the items were hideous! Who wear stuff like that? Oh yeah that’s right, no one! Also, could they please stop blowing kisses at everyone, it was cute the first 2 minutes, but then it was overkill. After 5 minutes, I switched the channel and watched Man V Food. I think I am addicted to this show because I get so amazed by how much this guy can eat! I mean did you see the sandwich that was as big as his head??? How does one even bite into something like that? After Man V Food, I watched my boyfriend on the food network….er I mean Bobby Flay. I love him, he can come cook for me anytime.

But, anyways during my oogleing of Bobby Flay, I had a chocolate chip cookie with some mini merignues.

After I watched a few episodes of throw-down and another Man V Food, I went right to bed. I think I was sleeping by 9:30 last night! Oh well, I guess I was tired.

For breakfast this morning, I had a bowl of cranberry pumpkin oats with some high fiber cereal on top.

Let’s hope this bowl can hold me over until lunch. I am going out for lunch today with a few people from work as a holiday lunch. We are going to Maggiano’s and I have no idea what I will have. I guess we will see later!

BUSY Friday!

So, today is going to be VERY busy for me and because of this, I need to hurry with my post! After work yesterday, I had to run a few errands for our wellness program and managed to pick up a few things for myself too! Once I got home,Gregg and I had some cheesy pasta with ground turkey, a salad and some whole wheat bread.

After dinner, we went to Erik and Tara’s apartment to watch the Bears game and ended up staying there until the game was over around 11! While at their apartment, I had a piece of my pumpkin pie, but I didn’t snap a pic. Sorry!

Then, this morning I had a bowl of Cranberry-Pumpkin Oats. I thought I loved the Cranberry oats, but this was 100 times better! The combination of the cranberry and pumpkin go really well together. I also mixed in some new cottage cheese that I saw at the store yesterday too!

Can you believe it! I was so excited when I saw that Fiber One made Cottage Cheese! But, was it good? I had mixed in 1/4 c into my oatmeal today and had 1/4 cup on its own. The verdict: SO GOOD!!!! It was nice and creamy, defiantly go check it out. But, now for my morning oats:

You will be seeing this mixture of oats in the future for sure! But, I gotta get going, I have to get to work. After work today, at 10am I have to go back to the dentist, then I have a hair appt and then it is my works Christmas party! I will probably post again tomorrow! :)

Monday Already?

That’s exactly how I feel after my weekend. I think the weekends are getting shorter and that I never have enough time to do everything I need to do.  On Friday afternoon, I had a turkey sandwich to hold me over until dinner.

After lunch, we were off to the dentist. Let’s just say, it didn’t go to well. I have to get a crown put on one of my teeth and it costs almost a grand to do! So, after I found out about that, Gregg and I went shopping for some Christmas things and ended up shopping until about 10:30 that night! However, we did stop at Bd’s Mongolian grill and built our own stir fry and salads. I love that place because you get to choose everything that goes into your meal. I even asked them to prepare it without oil and they did! It was awesome. After dinner and all of our shopping,  we got home and I had some egg nog ice cream and a pumpkin sugar cookie.

Then, on Saturday morning, I had once again Cranberry Oats. I am sorry you keep seeing the same thing, but it is too good to pass up in the morning.

 After breakfast, we went to the Whitewater football game where I think I froze within the first 5 minutes of being there. We couldn’t even sit down because the bleachers were full of ice and snow. Thank god I wore my snow pants and new winter boots that Gregg bought me on Friday. Then, after the game, we went the the Waterford Christmas Parade with my brother, sister-in-law and niece. My niece won this prize where she got to light the Waterford Christmas Tree right after the parade so we went to see her do that. After the parade, we went to this little place called Marty’s for dinner. I had the fruit plate with raisin toast and cottage cheese. Sorry no pic!!! But, when we got home on Saturday, I had package waiting for me! The wonderful people at You Bar sent me some bars and protein shakes! I am really excited to try all of these and will report when I do.

For dessert on Saturday night, I had a pumpkin cookie again! But, on Sunday, we did our typical coffee and muffin stop. I had a medium coffee with steamed milk from Caribou, half of a lemon muffin, some puffins and half of a banana.

However, as you can see, my banana was on its last life. I took one bite and threw it out! I opted for an apple instead, but didn’t snap a pic. During the day yesterday, I cleaned up the apartment to get it ready to put up the tree tonight! I will defiantly post pics of my tree once it is up! But, for lunch yesterday, I had the rest of my tofu and a flatout wrap with some jam and ricotta cheese.

Gregg and I just hung around the apartment cleaning and watching football all yesterday and didn’t really feel like making dinner, so we ordered Outback Steakhouse to go! I know what you are thinking, what could you possibly get there that is even remotely healthy? Well, the answer is frilled shrimp and veggies prepared without butter and a house salad. I also made a sweet potato at home and had half of it with my dinner.

After dinner, I had another sugar cookie and then headed to bed! I promise the sugar cookies will be gone soon! But, this morning, I had another bowl of cranberry oats with an apple and half of a muffin. The only thing I could take a pic of was my oatmeal because my camera died!!!

For lunch today, I packed up the other half of my sweet potato, some greek yogurt and raspberries, grapes and some puffins.

I am so glad it is Friday! This week was kind of boring and seemed to drag a bit! Oh well, at least it’s now Friday. Last night was a left-over night. While Gregg had left-over spaghetti, I had left-over Thanksgiving. We ended up freezing some of our Thanksgiving food because we knew we wouldn’t get to it right of way. I had a turkey sandwich on ww bread toasted, with low fat mayo, mustard and lettuce. I also had some celery, my homemade cranberry sauce, and pumpkin fluff. This meal was actually really good. I am not a fan of leftovers, but there was something about that sandwich that I loved!

After dinner, I watched the Santa Clause. This is one of my all-time favorite Christmas Movies! While watching the movie, I had a sugar cookie and some meringue cookies. YUMM!!!!

I may or may not have went back and had more of these little guys. I think I am addicted to them!

This morning, I had one of my new favorites: Cranberry Oatmeal. This time, I added some cloves. Let’s just say I will not be adding these again or at least not as much! Don’t get me wrong, my oats were still really good, but the cloves were a little over powering. I also topped my oats with Barbara’s Ultima Fiber cereal.

But, that’s all I have for now. I will be leaving work early today for a dentist appointment. But, after my appointment, Gregg and I will be hitting up Bayshore for shopping, coffee and dinner. Have a great day!
