Good Morning All!!!!So, last night, I tried something new again! This was basically me using a bunch of stuff I had in the fridge so it wouldn’t go bad! So, here we go! I will call this my version of rice and beans! I used:
- 2 cups of brown rice
- 1/2 cup of kidney beans
- 1 can of tomato sauce
- 1/2 cup of water
- 1 cup of cherry tomatoes
- about a tbs of garlic (minced)
- 1 tsp of salt
- 1 tsp of pepper
- 1 tbs of chili powder
- 1 tsp of cumin
- 1 tsp of red pepper flakes
I first took a skillet and brought it to medium heat. I added the garlic to the bottom of the pan along with about 1/4 cups of water. I let that cook for about 2 minutes and added the peppers, beans and tomato sauce. I let that simmer for about 2 minutes and added all the spices.
YUM!!! Look at all that GARLIC! I love garlic, and put it in almost everything I cook! This must have been pretty hot, look at all the steam coming off this pan! Once this is simmering for 3-4 minutes, turn the heat to as low as possible without turning it off. You just want to keep this nice and warm for now!
While this is cooking, make your brown rice. I just used Success Brown Bagged Rice. It only take about 10 minutes to cook! And the best part is that each bag contains 2 servings so it’s the perfect portion size for me and Gregg!
Once rice is complete, turn off the red sauce and add rice to it. Mix together and serve! This was one of the easiest meals ever!
We also made some salads to go with. And, sometimes you just want a beer, so I did!
I really liked this recipe, but I did end up adding some more chili powder for some more spice! After we were done with dinner, we went grocery shopping. But, before we went shopping we stopped at Starbucks and I got a nonfat misto to drink while shopping! I think Gregg and I do grocery shopping a lot differently than a lot of people because we go every 3 weeks and spend about 200 every time we go! But, then again, we don’t eat out too much and tend to make almost every meal at home! We make sure to stock up on tons of fruits and veggies. But, we always end up stopping at the store in between big shopping trips for more! We typically think of different meals we will make for 2-3 weeks when we go shopping and make our list off of that and obviously get the basics! So, 200 dollars later, we are stocked!!! When we got home, we unloaded all of our groceries and had some dessert.
I opted to have some frozen yogurt.
I also found a new treat at the store, Strawberry Hostess cakes! The best part is that they are only 100 calories! They were pretty yummy!!!! I also had a mini pumpkin spice cookie to go with! I told you I always have a sweet tooth! (I also had a 100 calorie pack of sweedish fish with my lunch too!)
Then, this morning, I mixed 1/3 cup of kashi cereal, 2/3 c of cinn puffins and 1/3 c of fiber one with some almond milk. I then took a piece of whole wheat bread and spread some pumpkin on top! I really liked this combo!
And, for a mid-morning snack, I had the best fig bar ever!!!!! An Oskri bar!!! Did you know this is made in my state!!!! A bar that I love, made right here in Wisconsin! If you haven’t tried this, do it! It is so good! They have a website that you can order them from if you can’t find them!!!
