A few new breakfast ideas

Hello Bloggies! I hope all is well on your end-I know it has been pretty busy over here. One would think that is would settle down once the wedding was over, but no. I think Gregg and I will always be “that” busy couple. Between working, working out, sleeping, bowling, cleaning and hanging out with friends and family we essentially do not have as much time as we would like. The phrase “let’s do nothing today” doesn’t exist for us. Maybe one day we will get out of that, but for now I have to roll with it.

Since I do not have time pretty much ever-including the mornings, I tend to bring my breakfast to work. Lately, I have been trying new things other than my basic oatmeal. Take a look at some of my new ideas and read to find out how satisfied I was after eating them.

Friday: Sammy Thin toasted with 2 tbs of almond butter topped with a pear. This meal was really good, but seemed not to hold me over as well as oatmeal. I was pretty much hungry after an hour or so.

Monday morning, I had a toasted sammy thin with 1 tbs of pb and 1 tbs of pumpkin butter topped with a banana. I also had a coffee and an adora disk on my way to work. I think this meal worked well because I essentially ate more. I listened to my body and instead of only placing 1/2 the banana on the bread, I used the whole thing. I also made sure to use milk in my coffee that morning as well. This meal was a home run in my book :) In fact I liked it so much that I repeated it on Tuesday.

This morning, I decided to get a bit more protein in than normal. I opted for a sammy thin with egg beaters and raspberries on the side. I also had a handful of almonds on my way to work with my Egg Nog Misto :)

This meal held me over well past my lunch time. I ended up eating lunch an hour later and not even finishing my lunch because I was full. I am sure you will be seeing this meal again in the near future-especially on Wednesdays. I start my group fitness instructor classes tonight so I wanted to make sure I was fueled up for it. I will let you know how it goes and what afternoon snacks and meals I had to prep for a 2 hour class. Take care!

Yummy Dinner and a Guest….

Good morning bloggers and friends! I am so glad it is already Thursday because all I want to do on Saturday morning is sleep and since it’s Thursday I only have 2 more days until I can actually get a good nights sleep! It’s weird though, because I have been getting between 7 and 8 hours of sleep each night this week. I guess I am still catching up from my all night bonfire on Sunday. Oh well, Saturday will be here soon enough and at this time, I will not be blogging I will be sleeping for a really long time! But anyways, enough about my crazy sleeping onto food!

Last night, I actually made something that we hardly ever make: Rice Sides. This kind was Creamy Broccoli flavored, but I added a few things to kick it up a notch. This rice side says you need to add water and butter, but I omitted the butter and just added water. It also says to bring water to a boil, add rice and simmer for 7-9 minutes. So, I did this but when it was about 6 minutes into it, I threw in some more fresh broccoli and some shrimp! Total points for rice and shrimp: 5.

Along with our dinner, I made the last of our corn on the cob. It looks like someone snuck into my picture! This is Charlie everyone, it’s a long story as to why we have him so I will let you think what you want :) Total points for corn on the cob: 1.

And last night for dessert, I didn’t have any points left so I really had to use my imagination! I had 1/4 cup of ice cream (a 1/2 cup is ZERO points), 2 tbs of fat free cool whip, strawberries and a little sprinkle of peanut butter granola (seriously, it wasn’t even a tbs!) So, needless to say, my Zero Point dessert was awesome! The strawberries enhanced the flavor of the ice cream and the granola added a little crunch, definitely a winner in my book!

This morning for breakfast, I made myself a bowl of Cinnamon Toast Crunch and fiber one. I also had some pineapple but didn’t snap a picture. My total points for breakfast: 3.

Wednesday Pot-Luck

Good morning blog world! It is kind of cold and rainy here in Wisconsin today so I guess it’s okay that I will be mildly busy at work inside today. Not only will I be somewhat busy, but we are having a company wide pot-luck today! I am really pumped for this, but I took a look at the sign-up sheet and it appears that I will be sticking with LOTS of fruit and Veggies. I am the one who created the pot-luck and for this particular one, it didn’t have to be a healthy pot-luck. In doing so, people are bringing things like chips, chicken salad (made with mayo, yuck!), sloppy joes, white buns, chili dip, cake and tons more items that are really bad for you. Normally I would say okay and try some of the items, but not today. I had a weekend of basically eating food that I never eat. So, I think I will be sticking with fruits, veggies and the item I made, diet soda cupcakes!

These are so easy to make and from a nutritional standpoint, much lower in fat and calories than the average cake. All you do is take a box of cake mix and add 1 can of diet soda and mix until smooth. Bake according to the directions on the box for a normal cake and there you have it! I decided to make cupcakes just because it is easier for a pot-luck. I also brought fat free whipped topping for the frosting. And of course when I was making them, I had to try them! So, last night I had one of these guys without the frosting:

They turned out really good. Nice and moist like any other cake and I think I liked them better because I knew I wasn’t eating a ton of calories or fat.  But, after I made these guys, it was time for a quick dinner: Wraps! I had roasted red pepper hummus, lettuce, turkey bacon and turkey wrapped in a tomato basil LaTortilla wrap for a total of 3 points! Seriously, you can not beat these wraps, the texture is dead on and in my opinion much better than flat-out wraps. Along with my wrap I had 1 cup of grapes and a few peanut butter filled pretzels (not pictured) for a total of 6 points for dinner.

Then for dessert, I had a no-pudge brownie with some strawberry ice cream for 2 points. I think this is my new favorite dessert because it is chocolate and strawberry…. you can’t go wrong.

And this morning for breakfast I had the typical Strawberry Oatmeal with a cup of coffee for 3 points.

Almost here….

The wedding is almost here and I think the bride is officially freaking out. I mean everything that could go wrong seems to be happening. People are canceling at the last minute, people are letting her know days before the wedding that they are actually coming, one bridesmaid got sick and cannot come to the wedding (Lyme disease, go figure!), the other maid of honor got poison ivy on her face and hands over the weekend and another bridesmaid is complaining about everything. Seriously, if I ever get married…… I just hope I won’t have to deal with everything she is! But, the wedding is on Saturday and I think I am ready. My speech is finished and it brought a few people to tears, so apparently it’s good :) Well, enough about the wedding for now, onto the food.

Last night for dinner, I made a summer favorite, corn on the cob! I pair our corn with cranberry chicken sausage for a total of 6.5 points (I actually had 2 pieces of corn, but only one is in the pic).

After dinner I had a 2 point no pudge brownie and then it was off to watch Gregg’s softball game. It was not the best game ever, but we won’t get into that… after the game I snacked on some mango and strawberries for 1 point:

For breakfast this morning, I had something I have been craving for a long time now: Peanut Butter-Banana Oats! In the mix:

  • 1/2 cup of dry oats
  • 1 cup of water
  • 1 tbs of dry PB2
  • 1/2 large banana
  • a little bit of truvia and cinnamon
  • Fiber one sprinkled on top

And like always, I took it with me to work and had a cup of coffee to go with it. Total points for breakfast: 3.5. For lunch today I packed up some broccoli, celery, hummus, a turkey sammy and some grapes for a total of 4 points:

My original plan was to dip all of my veggies in the hummus, but I changed my mind once lunch rolled around. Instead, I steamed the broccoli, dipped the celery in the hummus and used the rest of the hummus on my turkey sammy! I love the combo of turkey and hummus, so good!

But, that is all I have for now. Not exactly sure what is for dinner tonight, it will probably be one of thoes days where I will just pick something up because we have kickball and I have to wrap flowers for the bride tonight. I hope you all have a great day! :)

Beautiful Weather and a New Product!

Good Morning Everyone! Sorry I missed you all yesterday, but it once again has been very busy on this end, with my friends wedding coming up, we have just been bombarded with more things to do before Saturday. Being the maid of honor can take a lot out of you ya know! But, on Monday night, Emily (bride to be), Gregg and I went out for sushi. It was all you can eat sushi. I do not know why I actually go for this because I don’t eat that much. I would be content with 1 roll and 2 pieces of salmon, seriously. I ordered the rainbow roll and a few piece of salmon and eel. I also had some miso soup too! Total points for sushi and soup:7.

For dessert when we got home, I had a weight watchers ice cream bar and a few peanut butter filled pretzels for 2 points:

For breakfast yesterday, I made myself a bowl of oatmeal with strawberries, oats, cinnamon and a little bit of coconut extract. I will have to admit, this was not that great. It was very bland and all I wanted to do was add some sugar to it, which is not like me. I will not be having this again…. not worth the 2 points.

Lunch yesterday was actually my lunch from Monday. Monday was so busy with payroll that I did not have time to eat, so I just kept it at work and had it yesterday, left-over turkey sub, an apple and some carrots, total 6pts.

I kind of had the munchies yesterday and I went over my points (it’s okay, they are weeklies!), I snacked on a lot of different things and I did not take pics of everything. To sum it up, before dinner I had a few pretzels and a fig bar (will tell more later). For dinner though, I tried one of the quorn cutlets that I saw on Tina’s blog last week. I cooked mine in a skilled with some soy sauce. These really did taste like chicken! I was very impressed, the texture was pretty close and the taste was almost dead on. I will be buying more of these in the future. With my “chicken” I had some broccoli for a 1 point dinner. Can you believe I ate all of this for 1 point? Yeah, me either!

Too bad 1 point dinner don’t fill this girl up, I was back to munching….. during 90210 (which rocked by the way!), I had my usual popcorn and crystal light for 2 points:

And here is where I stopped taking pics….. are you ready for this, I had a no pudge brownie, a cc cookie and a weight watchers mini bar (okay2)! I know, not good…. but I counted and moved on. Once and a while this will happen to me where all I want it chocolate, and last night was the night. I think I am over the chocolate craving now (I hope so).

All I know is that a run is in the plan after work tonight and since the weather was in the 80′s yesterday and will be again today, it will be an outdoor run. Now, onto today. This morning I had something that I haven’t had in a long time: cereal. In the mix was 1/2 c of cinn toast crunch (reduced sugar) and 1/2 c of fiber one, topped with strawberries and a banana on the side for a total of 4 points.

I really like changing it up from my normal oats. So far it seems to be holding me over pretty well so maybe cereal will be in the mix tomorrow as well…. or maybe peanut butter oats…. you’ll have to wait and see! Today for lunch, I packed up some left over Turkey Chili, carrots, grapes and a snack pack for a total of 4 points.

Finally Nice Outside and Pictures!

Good morning everyone! It is such a beautiful day here in Wisconsin, nice blue sky and the birds chirping has to put you in a good mood! Not to mention, tonight is kickball. Kickball is so much more fun when it is nice outside and you won the week before, hopefully we can win this week too. And, to top it off my camera did not suck this morning and actually held out long enough for me to upload my pictures from the last few days, so lets get started.

On Tuesday night, I made homemade pizza with the herb crust I picked up from Trader Joe’s. For the toppings, I used onions, green peppers, mushrooms, black olives, a little bit of pizza sauce, mozz cheese and SHRIMP! Yup, you heard correctly, shrimp on our pizza. It is such a nice combo with the veggies and the crust that it’s hard to pass up.

For my dinner, I had 2 slices (the pizza actually made 10) and some popcorn (not shown) for a 7 point dinner.

This crust was really tasty. However, it was very sticky and kind of stuck to my pizza stone. Next time I will make sure to use a little flour or cornmeal on the bottom to avoid sticking.

For dessert on Tuesday night, I had some ice cream (0points).

Now, onto Wednesday; foo breakfast I had a bagel with cream cheese and some strawberries for a total of 2 points.

Lunch was leftover pizza, some broccoli and an orange. But since my camera was being all sucky I couldn’t snap a picture. Last night for dinner Gregg and I had some minestrone soup:

This rounded out to be a 5 point dinner. To top off my night I decided to have something different for my dessert. I wasn’t feeling anything overly sweet so I opted for a Trader Joe fiber muffin for 1 point:

But after that I needed something salty so I chose guiltless gourmet tortilla chips and salsa for another 2 points:

After I ate my dessert I finised unit one in my nutrtion book, watched the duel and headed to bed. This morning I decided to have a huge bowl of oats with 3/4 cup of oats, pumpkin, strawberries and cinnamon; total points: 4.

I also made myself a cup of coffee with creamer for 1 point. For my lunch I packed up some left over salad that was given to me at work yesterday. Our bankers came in and brought pizza and salad for everyone at our company (I kindly declined) and NO ONE touched the salad, so they let me bring it home! Along with my salad I packed up a arnold thin and a boca burger with an apple for a 3 point lunch:

Good Eats, the Casino and Mothers Day!

Good morning everyone! I hope you have all had a great weekend. I know mine has been booked! So, let’s get started. Thursday night, we had baked potatoes for dinner:

I also received a package that my apartment office was holding hostage! It was the giveaway package from Danica! I thought I was only getting the salad dressing, but she was nice enough to send over some Mac and Cheese too! Thank you so much Danica!

After dinner, we were off to kickball and guess what happened? WE WON!!!! 9-2 was the final score of the game. It was such a great game because the whole team was into it. So, of course to celebrate, we hit up the bar for a drink afterwards. Once we got home, it was time for bed since we had to get up so early.

On Friday, I woke up at 4:30a to get ready for my grandma’s funeral. We had to be there by 9 and since it was a 3.5 hour drive, we had to leave pretty early to get there. Before we really got on the road, we stopped at the cracker barrel where I had oatmeal with raisins, 1/2 of a bran muffin and a cup of coffee. We arrived at the funeral around 9-9:30 and spent some time visiting. The mass started at 11 and concluded around noon. After the mass and the burial, there was a family lunch-in. At the lunch-in, I had some bread, veggies and a rice crispy treat.

Once everything was wrapped up, we headed back home where Gregg and I went to the Brewer Game. At the game, we got to see Danny Gokey sing the national anthem and throw the first pitch of the game. It was really cool to see everyone so excited! At the game, Gregg and I had Cousin’s sub that we picked up beforehand. I also had a pretzel and 2 beers at the game. I would love to show pictures of everything on Friday, but I was in such a hurry that I forgot my camera. Sorry!

On Saturday, I woke up around 8 and headed to the gym. I am not much of a runner, but I do have a 5k coming up next weekend and I needed to make sure that I could do it. So I hit up the treadmill and just kept going. I blew past the 3.1 miles and stopped around mile 4. Like I said, I am not much of a runner, but I did it and I averaged about 8.5 minutes per mile. I guess it’s not too bad, but I would like to see it at 8. I guess it is something I will have to work on. For breakfast on Saturday, I had a bowl of oatmeal:

After I was done with breakfast, I jumped in the shower and got ready to shop with my mom. Mom came over around noon and we hit up the mall. I bought my mom a pair of earings for mothers day and grabbed a cup of coffee while shopping. Once we were done shopping, we came back to my apartment and got ready for dinner. Gregg and I took my mom to Louise’s for dinner. Louise’s is this great Italian place downtown. This place is very special to Gregg and I because it is where we went on our first date. When we got there, I ordered a glass of Sangria. I also had a cup of minestrone pesto soup and the three citrus grilled chicken. Overall, it was a great meal!

After dinner, my mom and I headed to the Casino with 2 of my aunt’s. I only took 40 with me because I didn’t want to waste my money on gambling. Needless to say I blew through the first 20 in about 15 minutes. Then, I figured what the heck, I will get my other 20 out and see what that will do for me. To make a long story short, I was down to my last 2.50 when my mom said I should bet 20 lines with the feature (I had no clue what I was doing) so I did, and I lost. But, I still had enough for one more play, so I did it again and I won! And it just kept going and going! I ended up winning $207 on that machine! So, I left with $167 more than I came with, it was awesome!

After the casino, my mom and I headed to a bar to meet up with my brother for 1 drink and then went home. On Sunday morning, I made my mom a hefty bowl of oatmeal and we watched 13 going on 30. It was a great weekend with my mom and I hope she enjoyed herself too!

Around 3 or so, I headed home and waited for Gregg and his parents to get there so we could go out to lunch/dinner. Whenever his parents are in town, we go to the Cheesecake Factory. But, I was good this time! I ordered the Chopped Vegetable Salad with Chicken, no cheese and Dressing on the side. This salad was so good that I didn’t even need the dressing! Of course, I ended up with leftovers sine the portions are huge there. And, I ended up taking this home with me for dessert:

I got the Low Carb Cheesecake with Strawberries. This is my favorite because it is not as heavy and rich as the other kinds. The crust is also really unique because it is a graham cracker and walnut crust. But, if you look close enough, you will see that I cut it half. I ate half of it and THREW THE REST OUT! Half of the cheesecake came in at about 11 points so I knew I didn’t want to keep this around much longer!

After my cheesecake, I watched Iron Chef on the Food network and hit the hay! This morning, I woke up and had the usual for breakfast: Oatmeal. In today’s oats: Pumpkin, Blackberries and Strawberries:

Right before I left, I decided to swap out the bread for some Smartfood Cranberry Crunch Popcorn. Gregg picked up a box of this for me this weekend and I am really excited to try it! Well, that is all I have for now. I hope everyone’s Monday goes by fast! Have a great one!

Rainy Thursday!

So, it is really foggy and rainy here in good ole Wisconsin this morning. I cannot wait until it is June 17th and I am on a plane to beaches and drinks and money! But, enough about that I don’t want to get too excited because then it will seem like it is so far away (but it’s really only 47 days away!). Yesterday was a much better day than the previous days and I think things are starting to fall into place, so yay!

Last night I had a good girl talk with my sister-in-law Amy. She really does know what she’s talking about! And, I guess I just really needed to have a little one on one with someone that could understand the whole situation and she did. Her and I went out to the Olive Garden for dinner. The olive garden has a few things that I ALWAYS get when I go there. So, I had a bread stick, some minestrone soup and the apricot chicken. So good! And I even splurged a little too, I had the raspberry lemonade. I usually just stick to water, but it just sounded so good! So, all together for my dinner, I ate 10 points. I still had 2.5 points left for the day after dinner, so I had a mini cookies and creme bar. I know I still had 1.5 points left, but thats not bad considering the past few days.

This morning was kind of a repeat from the last few days: A blue bran vitatop and coffee (2pts):

And for lunch today, I packed my left over chicken from the olive garden and some fruit for 4 points. I may eat the granola bar that I have in my desk if I am still hungry but we will see.

Tired Tuesday…

I am so tired today!!!!! I went to bed around 11 and woke up at 4:45 to go to work! And to make matters worse, I have to leave work a little early today and then spend the rest of my afternoon running around! But, before I know it, it will be 8pm and I will be in my nice warm pj’s watching 90210, I seriously can’t wait! But, now onto other things….. last night Gregg and I went grocery shopping. It ended up costing a little more than normal because we haven’t gone hard-core grocery shopping since February. So it should have been expected that it would cost more…… But, now our fridge, freezer and cupboards are full once again and it’s wonderful! I mean I seriously packed a real lunch today! Not like my lunch yesterday that ended up being left over pancakes, a mini protein bar and an apple that was on it’s last life, but we will get to that in a minute.

Last night I tried something new for dinner: Shrimp Scampi (the healthy version). I basically just boiled some pasta until it was almost done (it had about a minute left) and drained it. Then I took some garlic, olives, cherry tomatoes, a few hand-fulls of spinach, about 2/3 c of chicken broth, a little bit of white wine, lemon juice and parsley and threw it all together and then added a few pre-cooked shrimp to the mixtures. I let that heat for a few minutes and added the pasta and let cook for another minute or so. And there you have my healthy version of Shrimp Scampi. Here is the final product. I had about a cups worth for a total of 4 points. I also had a piece of foccacia bread for 1 point too!

And now for my real lunch! I packed up the rest of my Shrimp Scampi from last night, an apple, carrots and strawberries for a total of 5 pts.

All Booked!

So, our trip is all booked now! We decided to leave on June 17th instead of the 18th and come back on June 26th, seriously a 10-day vacation is the longest one I have ever had! Is it June yet? Because I am in need of a vacation!

Anyways, onto the eats for yesterday and today. Last night was fend for yourself so, I decided to have a turkey sandwich, grapes and yogurt for dinner. However, when I took the first bite of my yogurt it tasted kind of funny, so I threw it out and just had some plain vanilla yogurt. This dinner came in at 4 pts (turkey sandwich-2, grapes-1, plain vanilla yogurt-1).

After dinner, I did a load of laundry and made a bowl of popcorn(2pts) to snack on while watching 90210. This episode was pretty good and the new character may be my new favorite, he’s kind of a badass and it doesn’t hurt that he’s pretty good looking too! Where was this kind of guy when I was in high school? I don’t think they existed back then, oh well! Any who, after the show, I had 3/4 c of cheesecake ice cream for 4 pts, watched some more TV and was passed out by 9:30. I seriously think I am getting too old, or I have just been crazy tired lately and that’s why I keep falling asleep before 10.

This morning, I made a bowl of oats. This bowl was a lot bigger than my usual oats and I didn’t even think I used that much of my oats. In the mix was 2/3 cup of dry oats, 1 1/4 cup of water, cinnamon, cloves, nutmeg, orange extract and 3 tbs of dried cranberries for 4.5 pts.

For lunch, I packed up a nice 6 point lunch that included: lean cuisine (4 pts), an apple (1pt), carrots and a pb cookie (1 pt).
